Istan Food Fair
The Istan Food Fair goes to great lengths to retrieve old, traditional recipes in order to let the younger generation, and all the visitors who come to the town on the day of the exhibition, get to know some of their healthy culinary legacy.
On this day, the stoves are made ready to prepare exquisite dishes such as a stew with fennel, fried pumpkin with cod and clams, migas (a fried breadcrumb dish), and desserts such as zahínas, gachas fritas (a kind of fried porridge) and rice pudding. The dishes prepared the same day are presented on tables decorated with oranges, lemons and wheat bread, among other products. When the tables are ready, all visitors can sample the dishes that have been prepared, accompanied by healthy orange juice. Dances and music by different pandas or groups performing verdiales complete the festive programme.
