Recipe: Dave James Irish Beef Strips
When Dave James visits The Little Geranium, he can´t get enough of the amazing beef strips! Now Steven Saunders has shared the recipe with us.
Ingredients for 2.
- 300grm of good quality beef fillet cut into thin strips
- 2 cloves garlic sliced thinly
- Half a red onion sliced thinly
- 2 cm square ( approx.) of fresh ginger chopped finely
- 1 teaspoon of black pepper ground
- Freshly milled black pepper
- 1 green Jalapeno chilli sliced thinly seeds removed
- 1 teaspoon of pimiento piquante or paprika
- 1 whole green pepper cut in halves with seeds removed
- Maldon salt
- Olive oil
- 2 tablespoons of red wine sauce made from beef stock
- Fresh coriander leaves
- A little chilli sauce optional
Method
- Firstly seal the pepper to colour it and bake in a pre heated oven for 5 mins drizzled with olive oil and seasoned with Maldon salt.
- Season the beef strips with the pepper and some Maldon salt
- In a frying pan in a little olive oil seal the beef strips to colour but not cook
- Remove the strips and allow to rest , they should be very rare at this stage
- In the same pan fry the onion, ginger and garlic together and add the paprika
- Add the beef stock and cook until a thick tasty and pungent sauce and now add the sliced chilli
- Now add back the strips of beef and cook for a 2 minutes to keep pink or for at least 5 minutes if you like it well done like Dave does!
- Remove the pepper from the oven and fill with the beef strips
- Glaze with a little chilli sauce ( listen to Steven describe how to make it here!)
- Sprinkle with fresh coriander and serve
